A brilliant mix of fresh local products associated with noble ingredients, like truffles which by the way earned him his reputation.Allusion to his lucky dish : Pigeon in a crust foie gras, chard and truffles. You’ll find with each mouthful the personality and know-how of this great chef. A generous and gentle cuisine and filled with emotions.
